LEMON CINNAMON MANDAZI

I think I am becoming obsessed with cooking MANDAZI! This is my second recipe and this time I opted to cook with baking powder instead of Yeast and flavored the Mandazi with Lemon and Cinnamon. Mandazi is a popular East African snack that is cooked by deep frying dough that has been kneaded and flavors added into it. There are so many variations to Mandazi recipes, but once you get the basics of cooking this delicious snack, you will be able to have it in any way you want.You are allowed to add different spices, liquids and even vegetables. Mandazi are so popular that even Martha Stewart made them, check out her Recipe which I will definitely try out! They can be served with Tea for breakfast, as an appetizer, as a lunch snack and even dinner dessert. I'm having fun making these Mandazi that you will definitely be seeing more variations of it. Lemon gives these Mandazi a lovely fragrance while Cinnamon add a spicy taste to this snack. You can serve this snack as a savory dish with a dip, or beans. CARDAMON MANDAZI

Don't you just love a freshly made breakfast in the morning? Today I'm going to share with you a Kenyan snack recipe that is great for breakfast and any time of day. Mandazi is made by frying kneaded dough briefly in hot cooking oil. Mandazi is also known as Swahili Bun or Swahili Coconut Doughnut that originated from the Coastal region where the Swahili are the local inhabitants. Mandazi is very popular since it is convenient to make and can be interpreted in many forms while cooking. The original Mandazi is made with Coconut Milk or Coconut Cream, Cardamon Spice and Yeast, but you can make with Milk or Water, when it comes to spice you can add Cinnamon or any other Spice you prefer. As for the Yeast you can use Baking Powder instead.This Snack can be eaten with most foods like Dips, Beans (Mbaazi, the most common for this recipe), Milk Tea or Black Tea or you can have it on its own. You can even make the Mandazi with Almond nuts or Peanuts to give it a different flavour. You can either use Eggs or skip it, mine I made without and it turned out great. This is just one variation of the many recipes available for Mandazi, I will be making more in the near future as I want to try out the different flavours. MINI CINNAMON MANDAZI


Happy Sunday! I always look foward to Sunday mornings because I get inspired to make delicious breakfast without having to worry about time. Lately I'm having mandazi cravings, after that yummy orange mandazi, I still want more. Every body loved that orange flavour in mandazi plus the vibrant color. Today I wanted to add spices to get that warm sweet spiciness. Have you ever tried those recipes that are usually at the back of food packets? I always see them and just brush off, but today I decided hmmmm, what's the worse that could happen? Nothing went wrong, in fact these mandazi were delicious that my sisters were eating them before I finished cooking them. So this recipe has been inspired by the back of my mandazi flour packet with every detail followed. Have you ever tried a recipe from a food packet?

NUTMEG MIXED SPICE MANDAZI

Today just feels like a weekend. Anybody else feels that way? I guess it's because we're still in an election mood. There was no bread so I thought I would make something that was filling and tasty too. What I could think of that would make a large quantity was Mandazi since everyone is at home. I just followed this recipe but this time I added in Nutmeg and Mixed Spices to give them that extra spice aroma and flavour. Such an easy dish to make and in less than an hour you will have your breakfast snack or food to snack on throughout the day. Spices were just too awesome as you could smell the delicious aroma all around the house as they fried. Mandazi are becoming my new favourite to go to breakfast accompaniment and snack. CARDAMOM SPICED MANDAZI


When it comes to Mandazi, I love them fluffy and soft and, I love having them warm with marsala tea. Adding cardamom spice to your mandazi makes them so delicious since cardamom is fragrant with a touch of earthiness.

ORANGE ZEST MANDAZI


Last week of February guys, how has time flown so fast? I had fun this month and I must say it's so far the best February ever! It has been a while since I cooked Mandazi so today I'm bringing you Orange flavored Mandazi. Oranges have such a citrusy flavor that brings vibrant and sort of tropical aroma. I used yeast for these Mandazi because it makes them light yet soft, plus I just love the smell of yeast fermenting in the dough! I made lemon zest mandazi that were to die for! So it was only fair that another citrus fruit made it into my mandazi! Another thing I used was mandazi flour instead of the regular all purpose flour. I've never used Mandazi Flour before and I must say it is perfect for Mandazi. You will definitely enjoy these delicious orange zest mandazi that will become your favorite😋😋

LEMON MANDAZI


First of all, let us talk about the aroma of these lemon mandazi! Citrus fruits have natural aromas that get you excited, and I love me some lemon, in bread, cakes, salad, pancake or crepes, drinks and even chicken! Mandazis are best eaten warm with your favorite drink like tea, coffee, juice or even yoghurt. When it comes to mandazi, I love them hollow at times while other times I love them with a little bit of flesh, especially if I am craving Mandazi. Family loved the orange Mandazi but these were a constant hit, with no left overs to hide away!

I thought that now that we are quarantined, I would have the chance to cook dozens of meals but I guess the inspiration was lackluster to the point I was always happy that there were left overs. No need to cook. I hope this year will be a bit better and hoping for the best. So to start us off, ill share with you my top 30 recipes on my YouTube channel. Hey Lovelies. So 2017 came and went and now we are already in 2018. There is never a new year post that does not have the top posts or recipes for the last year. So I have compiled my Top 10 Recipes for 2017 based on the number of views that the recipes got. It has been a great year and I am happy that I made the choice to start a food blog. I always had that fear of what will I post? Will people respond to my recipes? Will I enjoy it? But then I decided to start anyway and I have had so much fun doing it. My love for cooking kept growing and I started realizing that the only way to deal with fear is to face that which you fear. I have enjoyed every bit of it and look forward to many more creative fun times in the kitchen. The best part is the feedback that I get from you readers. It's already April! Where did time go? How has it come to this fourth month so suddenly? Anyway "takes breath" moving on to today's agenda...Sharing those recipes that were some of my very favorite in 2017. CHICKEN FRIED RICE


MERRY CHRISTMAS MY LOVES! How many people have been waiting for Christmas as I have been? I know its not the same as it used to be when we were growing up, but, am still that excited! This year has been an amazing year, I decided to start my YOUTUBE channel and so far I'm loving the response I have been getting from you guys. So far I have 1,550 subscribers and looking foward to what 2020 will bring! Another channel milestone is that I got my first 10,000 views on one of my recipe, the fried pork recipe, people seem to love it that much. As I write, its so far ganered over 13,000 views! Okay, enough about my channel, PLEASE SUBSCRIBE if you have not! For real now, about Christmas🎄🎄 My memories of Christmas will always be, wearing new clothes, going to church, drinking Fanta and mandazi after church, then going home to eat Chapati. We only ate Chapati once a year, that was during Christmas, so you can only imagine how exciting it was! Nowadays, all grown up, I think I will uphold some traditions 😉. MY TOP TEN RECIPES OF 2018

2018 had been a great year, a little over 100 recipes! Wow! Mostly I had lots of fun because I kind of got my mojo back to get into the kitchen. 2017 had been a hard year since I had a really personal tragedy, which I think I am getting better, so I can say that getting back to the kitchen was a sort of therapy for me. I already did your favorite recipes for 2018 of which I have a few favorites, wait, who am I kidding, I loved all of them! Check them out and see if you have some recipes that you loved the most last year. I did more soups which I was happy about since soups are healthy and make your meals that much more enjoyable. My very favorite month was August because of my delicious avocado theme that saw me have amazing recipes that had this delicious fruit. Here are the recipes that I enjoyed cooking and I found myself making over and over since I could not have enough of them. SESAME MAHAMRI


Mahamri is a delicious coastal snack that is known and famous for its aroma of cardamom, a sweet spice and delicate taste of coconut. You can use coconut milk or cream. I think dessicated coconut works as well, that reminds me, I think I should cook with dessicated coconut next time. For my first mahamri they turned out pretty delicious, I know a soon to be favorite in the house. In unrelated news, is it just me who loves the smell of yeast fermenting or what? Mahamri is unique in that you only cook with yeast whereas for Mandazi, you can cook them using baking powder. Try something new today with this delicious sesame seeds mahamri, I promise, you will love.
